Appetizers
The first appetizer will be Caprese Skewers. It is very simple to make and will literally take less then 15 minutes.
Caprese Skewers
-20 grape tomatoes, halved
-10 oz. (ounces) mozzarella cheese, cubed
-2 tbs. (tablespoons) extra virgin olive oil
-2 tbs. (tablespoons) fresh basil leaves, chopped
- 1 pinch of salt
- 1 pinch ground black pepper
- 1 pinch garlic salt (or marinate the tomatoes in chopped garlic for 30 minutes)
- 15 toothpicks
1. Cut the tomatoes in half.
2. Toss the tomatoes, mozzarella cheese, olive oil, basil, salt, garlic salt, and pepper in a medium sized bowl until everything is well coated.
3. Get the toothpick and put 2 pieces of tomato, and 1 piece of cheese it. (In tomato-cheese-tomato order).
4. Enjoy :)
Serve this dish on a platter and you and/or your guest will love it!
The second appetizer is our Fresh Tomato Basil Dip. It is also easy to make so don't get frightened by the list of ingredients.
Fresh Tomato and Basil Dip
-2 ( 8 oz.) packages of cream cheese, softened
-1 ( 8 oz.) container of sour cream
-2 cups fresh basil leaves, minced
-1/4 cup fresh parsley, minced
-2 tomatoes, seeded and chopped
-2 garlic cloves. minced
- 1/2 a lemon, juiced
- 2 tbs. (tablespoons) tomato paste
-1 tsp (teaspoon) onion salt
-1 tsp (teaspoon) Worcestershire sauce
-1 tsp (teaspoon) white sugar
-couple pinches of black pepper.
1. Combine the cream cheese and the sour cream in a large mixing bowl.
2. Combine the basil, parsley, tomatoes, garlic, lemon juice, tomato paste, onion salt, Worcestershire sauce, white sugar, and pepper to the cream cheese mixture.
3. Serve with dip chips, crackers, or slices of toasted bread rolls.
Great way to serve this dish is either in a large bowl and dipping items surrounding the bowl, or serve in mini bowls with dipping items surrounding it.
